  • Mince the 2-3 garlic cloves, grate the 2 inches of fresh ginger, and slice the green onions/scallions, keeping the white and green parts separate.
  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic cloves, grated fresh ginger, and the white part of the scallions to the hot oil. Sauté for 1 minute until fragrant.
  • Add the 1 pound of ground pork (or ground turkey) to the skillet. Break it up with a wooden spoon and cook until no longer pink and browned. Drain any excess fat if needed.
  • Meanwhile, fill a pot with water and bring it to a boil for the noodles.
  • Add the 16 oz. bag of coleslaw mix (pre-shredded cabbage and carrots) to the skillet with the pork. Stir well and cook down for about 3-4 minutes until slightly softened but still crisp.
  • Once the pot of water has come to a boil, reduce heat to a simmer and add the soba noodles from both packages (remember to save the flavor packets!). Cook the noodles for 3 to 3 1/2 minutes. Drain and rinse them lightly under cool water.
  • Return the skillet to medium heat. Add the 2 Fortune noodle flavor packets and 1 1/2 tablespoons of toasted sesame oil to the skillet with the pork and vegetables. Stir thoroughly to combine.
  • Add the cooked, drained noodles to the skillet. Stir and toss everything together very well until the noodles are evenly coated and mixed with all the ingredients.
  • Serve immediately in bowls. Garnish with the green slices of the scallions and a sprinkle of sesame seeds. Add a little soy sauce (or gluten-free tamari) if desired for extra flavor. Enjoy!
