Bacon-Wrapped Chicken with Creamy Spinach Filling

Delicious Dairy-Free & Gluten-Free Bacon Wrapped Spinach Stuffed Chicken: A Flavorful Comeback

For years, one of my absolute culinary delights was bacon-wrapped chicken, generously stuffed with cream cheese. It was a dish that brought immense satisfaction, a perfect harmony of savory, creamy, and smoky flavors. However, life has a way of throwing curveballs, and for me, that was developing a severe dairy allergy two decades ago. With a heavy heart, I bid farewell to many of my beloved dairy-laden dishes, including this bacon-wrapped chicken masterpiece. The thought of creating a suitable substitute, surprisingly, didn’t cross my mind until quite recently. And oh, what a revelation it has been! My new creation, this incredible bacon-wrapped spinach stuffed chicken, is an absolute game-changer. It is unbelievably delicious, bursting with layers of flavor, and I’m honestly kicking myself for waiting so long to bring it into existence. But as they say, better late than never, right?

This recipe isn’t just a triumph for me; it’s also perfect for my daughter, who is lactose-intolerant, and will undoubtedly become a staple when she visits home from college. It’s a dish that genuinely caters to specific dietary needs without compromising on taste or texture, proving that healthy and delicious can indeed go hand-in-hand. The anticipation of making it for her, knowing she can enjoy it without worry, fills me with joy. It’s truly right up her alley – and yours too, if you’re seeking a flavorful, diet-friendly meal!

Bacon Wrapped Spinach Stuffed Chicken

Imagine succulent chicken breasts, tender and juicy, expertly wrapped in crispy, savory bacon. But the magic doesn’t stop there. Each piece is generously stuffed with a vibrant, aromatic filling of fresh spinach, fragrant minced garlic, tangy sun-dried tomatoes, and a delightful surprise: Daiya dairy-free mozzarella shreds. The combination of these ingredients creates an explosion of flavors and textures. The Daiya shreds melt beautifully, contributing a creamy, cheesy element that truly makes this dish “ooze” with deliciousness, mimicking the creamy texture of its dairy-filled predecessor without any of the allergens.

The Perfect Pairing: Sides to Complement Your Stuffed Chicken

To elevate this magnificent main course, I love serving it alongside colorful and nutritious side dishes. My go-to accompaniments are tri-color roasted carrots, which add a touch of sweetness and earthy notes, and my easy creamy dairy-free cauliflower rice. The cauliflower rice is a fantastic, light alternative to traditional rice, perfectly absorbing the flavorful juices from the chicken and providing a wonderfully creamy, yet dairy-free, texture. Together, these elements create a well-rounded and satisfying meal that is both healthy and incredibly indulgent.

Why This Recipe is a Must-Try for Everyone

This bacon-wrapped spinach stuffed chicken isn’t just for those with dietary restrictions; it’s a dish everyone will adore. The careful selection of ingredients ensures a symphony of tastes that appeals to a wide palate. The savory crunch of the bacon contrasts beautifully with the tender chicken, while the spinach adds a healthful freshness. Garlic and sun-dried tomatoes provide a depth of umami and a slight tang, cutting through the richness and brightening the overall profile. The dairy-free cheese alternative ensures that no one misses out on that comforting, gooey texture that makes stuffed chicken so appealing.

Preparing this dish also offers a sense of accomplishment, transforming simple ingredients into something truly extraordinary. It’s perfect for a weeknight dinner when you want something special without too much fuss, or elegant enough to impress guests at a dinner party. The vibrant colors and enticing aromas alone will have everyone eager to dig in.

Tips for Success: Mastering Your Bacon-Wrapped Chicken

Achieving perfection with this recipe is straightforward, but a few tips can make all the difference. When selecting your chicken breasts, aim for medium-sized, relatively even pieces to ensure uniform cooking. Pounding thicker breasts slightly can help create a larger pocket for stuffing and ensure quicker, more even cooking. Marinating the chicken in Italian dressing isn’t just about flavor; it also helps tenderize the meat, resulting in a more succulent final product.

When it comes to stuffing, don’t overfill the chicken, as this can make it difficult to wrap securely. A moderate amount of the spinach mixture is ideal. Securing the bacon with toothpicks is crucial to ensure it stays in place during baking, allowing it to crisp up beautifully around the chicken. For extra crispy bacon, you might consider starting the chicken on a higher heat for a short period, or finishing it under the broiler for a minute or two (watch carefully to prevent burning). Always use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C) for food safety.

Servings 4

Ingredients

  • 3-4 boneless skinless chicken breasts
  • Italian dressing (for marinating chicken)
  • 1-2 cloves of garlic, minced
  • 2 cups spinach leaves, washed and chopped
  • 1/2 cup Daiya dairy-free mozzarella “cheese” shreds
  • 1/4 cup julienne cut sun-dried tomatoes
  • pinch of salt and pepper
  • 6-8 pieces bacon (I recommend pre-cooked, uncured bacon for ease)
  • chopped parsley for garnish

Instructions

  • Marinate chicken breasts in Italian dressing for at least 30 minutes, or up to several hours for maximum flavor.
  • Preheat oven to 375 degrees F (190°C).
  • Thoroughly prep your spinach and garlic by washing and chopping them.
  • In a medium bowl, combine the chopped spinach, minced garlic, sun-dried tomatoes, “cheese” shreds, and a generous pinch of salt and pepper. Mix well to ensure all ingredients are evenly distributed.
  • Carefully slice each chicken breast horizontally through the middle, creating a pocket, but be sure not to cut all the way to the edge, leaving one side intact.
  • Generously stuff each chicken breast with the spinach mixture. Once stuffed, close the chicken breast and wrap it with 2 pieces of bacon. Secure the bacon firmly in place with toothpicks to prevent it from unwrapping during cooking.
  • Place the bacon-wrapped, stuffed chicken breasts in a baking dish. Bake for 45 minutes uncovered, or until the internal temperature of the chicken reaches 165°F (74°C) and the bacon is crispy. Once finished, baste with the flavorful pan juices and serve immediately. Enjoy your culinary creation! 🙂
  • Before serving, garnish with fresh chopped parsley for an extra touch of color and freshness.
