- 1/4 cup julienne cut sun dried tomatoes
- 1 tsp oil from the jar of sun dried tomatoes
- 3 pieces cooked bacon, crumbled (I use uncured, pre-cooked bacon and pop 3 pieces in the microwave)
- 1 packed cup fresh spinach leaves
- 1/3 cup shredded cheese or cheese substitute (like dairy-free Daiya Mozz. “cheese” shreds)
- salt and pepper to taste
Instructions
- Bring a pot of lightly salted water to a boil
- While water is boiling, gather your ingredients, open the package of gnocchi, open the jar of julienne cut sun dried tomatoes, cook your 3 pieces of pre-cooked bacon in the microwave and grate the cheese.
- When the water is boiling, put the gnocchi in the pot and boil for 2-3 minutes (or until the gnocchi floats to the top of the water)
