  • 1/2 medium onion, finely chopped
  • 1/4 cup dairy-free mozzarella shreds or goat cheese crumbles (We highly recommend Daiya brand dairy-free mozzarella shreds for the best melt and flavor!)
  • 1/3 cup gluten-free bread crumbs (or regular, if not gluten-free)
  • 2 Tbsp Hol-Grain Chicken Coating Mix (or substitute with an equal amount of your favorite gluten-free breadcrumb mix, perhaps seasoned with a pinch of poultry seasoning)
  • 2 large eggs
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dried chopped parsley (for garnishing, optional)
  • extra salt and pepper to taste
