- 2 eggs
- 1 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp dried chopped parsley (for garnishing)

- Preheat your oven to 400 degrees F (200 degrees C). For best results and to prevent sticking, line your baking sheet with parchment paper or a silicone mat, and lightly grease it with a little extra olive oil.
- In a large mixing bowl, combine all the ingredients: riced cauliflower, chopped onion, dairy-free mozzarella shreds (or goat cheese crumbles), gluten-free bread crumbs, Hol-Grain Chicken Coating Mix, eggs, olive oil, salt, pepper, and garlic powder. Mix thoroughly with your hands or a spoon until all ingredients are well incorporated and the mixture is evenly coated. Ensure the cauliflower is well-coated and the mixture holds together when pressed.
