Ingredients

  

  • 1 cup freshly brewed coffee (I use a dark roast)
  • 3/4 cup granulated sugar
  • 1/4 cup canola oil
  • 1 egg
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose unbleached flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 cup your favorite chocolate chips (I use dark choc chips)
  • 2 Tbsp roasted cocoa nibs
  • extra sugar to sprinkle on top

Instructions

 

  • Preheat oven to 375 degrees F (190 degrees C).
  • Lightly grease a 12-muffin tin, or line with paper liners.
  • In a large mixing bowl, combine all of the wet ingredients: freshly brewed coffee, granulated sugar, canola oil, egg, and pure vanilla extract. Whisk them together until well blended and smooth.
  • In a separate medium bowl, thoroughly mix all of the dry ingredients: all-purpose unbleached flour, baking powder, baking soda, fine sea salt, chocolate chips, and roasted cocoa nibs. Ensure everything is evenly distributed.
  • Gradually add the dry ingredients mixture to the wet ingredients bowl. Whisk by hand just until everything is blended well and no streaks of flour remain. Be careful not to overmix, as overmixing can lead to tough muffins. A few lumps are perfectly fine.
  • Divide the batter evenly among the prepared muffin tin cups, filling each cup about 2/3 full. This will allow the muffins to rise beautifully without overflowing.
  • (Optional) For a delightful crunchy topping and a touch of sparkle, sprinkle a pinch or two of coarse sugar (or regular granulated sugar) on top of each muffin before baking.
