  • 1 tsp oil from the jar of sun dried tomatoes
  • 3 pieces cooked bacon, crumbled (I use uncured, pre-cooked bacon and pop 3 pieces in the microwave)
  • 1 packed cup fresh spinach leaves
  • 1/3 cup shredded cheese or cheese substitute (like dairy-free Daiya Mozz. “cheese” shreds)
  • salt and pepper to taste

Instructions

 

  • Bring a pot of lightly salted water to a boil. Ensure the pot is large enough to allow the gnocchi to cook evenly without sticking.
  • While the water is heating up, gather all your ingredients and prepare them. Open the package of gnocchi, have the jar of julienne cut sun-dried tomatoes ready, cook your 3 pieces of pre-cooked bacon (a quick microwave session works wonders for speed), and grate your cheese or open your chosen dairy-free alternative. This “mise en place” makes the final steps incredibly swift.
  • Once the water reaches a rolling boil, carefully add the gnocchi to the pot. Cook for approximately 2-3 minutes, or until the gnocchi float to the top of the water, indicating they are perfectly cooked and tender. Be careful not to overcook them, as they can become mushy.
