Wildwood Garland Restaurant Review: Savoring Smoke, Craft, and Whiskey in North Texas
Nearly a decade ago, I had the pleasure of dining multiple times at the original Wildwood location in Southlake, Texas, shortly after its grand opening. The memories of those exceptional meals stayed with me, leaving a lasting impression of quality and innovation. So, when the opportunity arose to select a restaurant for a review in Garland, Texas, and I discovered that Wildwood had expanded its esteemed presence with a second location there just last year, my choice was unequivocally made! I simply had to revisit the Wildwood experience, and thus, I bring you my comprehensive Wildwood Garland Restaurant Review, delving into what makes this new iteration a must-visit dining destination in North Texas.

An Inviting Ambiance: Wildwood Garland’s Modern Revitalization

Stepping into the Wildwood Garland location, I was initially surprised by the interior’s atmosphere. My recollection of the original Southlake establishment leaned towards a more overtly upscale aesthetic. However, my initial perception quickly shifted as I took in the surroundings. The Garland space, while different, exuded an undeniable warmth and comfort. It felt incredibly inviting and decidedly comfortable, a perfect setting for both casual gatherings and special occasions. I’ve since learned that the original Wildwood in Southlake underwent a significant redesign in 2016, transitioning to a more modern and relaxed aesthetic, and this refreshed, contemporary design philosophy was meticulously carried over to their new Garland outpost. This strategic move ensures a consistent brand identity and a welcoming atmosphere that resonates with today’s diners.
Concurrently with the redesign, Wildwood also completely updated its menu, ushering in a new culinary era for the brand. To encapsulate their refined approach, a powerful new tagline was introduced: “smoke, craft, whiskey.” This trio of words perfectly articulates the restaurant’s core identity. “Smoke” proudly references their signature wood-fired grill cuisine, where carefully selected woods impart distinct, mouth-watering flavors to their dishes. “Craft” speaks to their dedication to artisanal techniques, from expertly prepared dishes to their curated selection of craft beers. Finally, “whiskey” highlights their specialized cocktails, prominently featuring an impressive array of bourbons and ryes, creating a sophisticated beverage program that complements their smoky, flavorful fare.
On the evening of my visit, I was adhering to the strict guidelines of the Whole30 eating program, which presented an interesting challenge for a restaurant review. Knowing that dining is always more enjoyable and insightful when shared, especially with someone who possesses an equally keen appreciation for exceptional food, I brought along one of my favorite dining partners in crime. Their willingness to explore the menu freely allowed us to experience a broader spectrum of Wildwood’s offerings, providing a more comprehensive review of this exciting new Garland establishment.
Starting Strong: Wildwood Garland Appetizers
The Decadent Dragon Dip

My dining companion, unburdened by dietary restrictions, started with an appetizer that I could only admire from afar – the legendary Dragon Dip, beautifully presented and pictured above. This culinary creation is a rich, creamy cheddar cheese beer dip, uniquely infused with mustard seeds, adding a subtle tang and depth of flavor that elevates it beyond a typical cheese dip. It’s served alongside two invitingly small loaves of perfectly toasted pretzel bread, ideal for scooping up every delicious morsel. My partner described the dip as incredibly creamy, deeply comforting, and utterly delicious. While acknowledging it was “a tad greasy” – a common characteristic of such a decadent dish – the overall experience was overwhelmingly positive. The pretzel bread was praised for its soft texture and undeniable freshness, providing the perfect vehicle for the flavorful dip. When asked if he would order it again, his answer was an emphatic, resounding “Definitely!” This appetizer alone makes a strong case for visiting Wildwood Garland.
The Refreshing Artisan Salad

Meanwhile, as my companion indulged in the rich Dragon Dip, I opted for a more Whole30-compliant choice: the Artisan salad. While any salad might seem to pale in comparison to a warm, cheesy beer dip served with fresh pretzel bread, I was genuinely impressed by the quality and flavor of my selection. My Artisan salad was a vibrant medley of mixed greens, plump mission figs, crisp jicama, juicy grape tomatoes, and toasted pepita seeds. Each ingredient spoke of freshness and quality, contributing to a delightful symphony of tastes and textures. The figs provided a touch of sweetness, the jicama offered a refreshing crunch, and the pepita seeds added an earthy, nutty counterpoint. It was a well-balanced and satisfying option, demonstrating Wildwood’s commitment to quality even for simpler dishes. Despite my dietary constraints, I found myself thoroughly enjoying a salad that was far from an afterthought, proving that Wildwood Garland caters to a variety of palates and needs without compromising on flavor.
A Culinary Revelation: Wildwood Hanger Steak and Exceptional Service
Navigating Whole30 with Grace

For my main course, I chose the Hanger Steak, which required a few modifications to ensure full compliance with my Whole30 eating program. This is where I must pause and extend a heartfelt shout-out to our server. Her service was nothing short of extraordinary. She was amazingly patient, diligently attentive, and incredibly sweet throughout our entire meal. Navigating a menu with strict dietary requirements can often be a challenging and sometimes awkward experience for both the diner and the server. However, she handled it with remarkable professionalism and genuine care. She made multiple trips back to the kitchen on my behalf, patiently inquiring about ingredients and preparation methods – a crucial step given my list of “no-nos” included sugar, soy, alcohol, grains, and more. Her dedication ensured I could enjoy a delicious meal without compromising my dietary goals.
With her invaluable assistance, we ultimately determined that the Hanger Steak, served without its usual red wine reduction sauce, would be my best and most flavorful option. And instead of the traditional mashed potatoes, I wisely opted for the seasonal vegetables, eager to see what fresh offerings the kitchen had prepared.
The Star of the Meal: Perfectly Cooked Hanger Steak

My Hanger Steak was, without a doubt, the undisputed star of the meal! I must confess, as my dining partner enjoyed their unconstrained choices, I had been feeling a tiny pang of self-pity, believing I was “missing out” on the full Wildwood experience due to my Whole30 restrictions. The thought of eating a steak, a dish I adore, completely devoid of any sauce sounded, frankly, torturous to someone who, like me, loves her condiments. However, all my reservations evaporated with the very first bite. Then, I tasted my vegetables. Wow. Just… wow. I was genuinely surprised and, most emphatically, NOT missing out on anything at all! My steak was cooked to absolute perfection, a flawless medium-rare, boasting incredible tenderness and a rich, deeply satisfying flavor. The outer char provided a delightful textural contrast and carried a distinct, aromatic hint of hickory smoke, a testament to Wildwood’s signature wood-fired grilling expertise. It was a masterclass in simplicity and quality, proving that a truly great cut of meat, expertly prepared, needs no elaborate embellishments.
Seasonal Vegetables: A Harmony of Flavors

The seasonal vegetables served alongside my steak were a revelation in themselves. This vibrant mashup consisted of beautifully roasted butternut squash, tender Brussels sprouts, additional segments of squash, and subtly sweet red onions. I was so utterly captivated by this combination of flavors and textures that I have since diligently re-created this exact medley at home on several occasions. The natural sweetness of the butternut squash, the slight bitterness of the Brussels sprouts, and the savory depth of the onions created a harmonious and perfectly balanced pairing for my robust hanger steak. It was a side dish that truly elevated the entire meal, demonstrating Wildwood’s thoughtful approach to all elements of their plate. I would eagerly order this entire meal again, exactly the same way, with one small exception: next time, unrestricted by Whole30, I would absolutely indulge in trying the red wine reduction sauce, just to experience the dish in its complete, intended glory. The quality of the steak and vegetables assures me it would only enhance an already superb offering.

Flavorful Fare: Hickory Smoked Fried Chicken
My dining partner, ever the adventurous eater, chose the Hickory Smoked Fried Chicken, accompanied by a refreshing napa slaw. Opting for a healthier side, he substituted the parmesan fries for Wildwood’s green beans. The chicken is prepared “hot Nashville-style,” a cooking method known for its bold flavors and often a kick of spice. While he found the chicken undoubtedly tasty, he noted it wasn’t quite as crispy as he typically prefers for fried chicken. Despite this minor point, the flavor profile was distinctive and enjoyable, imbued with that characteristic hickory smoke that speaks to Wildwood’s wood-fired expertise.

The green beans, however, were an absolute triumph. They were seasoned perfectly, cooked just right – tender yet still retaining a slight bite – and avoided the common pitfall of being overcooked and mushy. They provided a wonderful, fresh counterpoint to the richness of the fried chicken. The napa slaw, another excellent side, presented a complex and intriguing flavor combination. What came as a delightful surprise was its spiciness, attributed to the inclusion of jalapenos. This isn’t a complaint by any means, but rather a friendly heads-up for those who might expect a milder slaw. The subtle heat added an exciting layer to the meal, showcasing Wildwood’s willingness to infuse their dishes with unexpected, yet pleasing, elements. Both sides perfectly complemented the main dish, further enhancing the overall dining experience at Wildwood Garland.
Missing a Sweet Ending & Future Plans
By the time we concluded our main courses, we were both comfortably full, and of course, my Whole30 restrictions meant sugar was off-limits anyway. While the dessert options on the menu sounded enticing and well-crafted, I found myself reminiscing about a particular dessert I had thoroughly enjoyed at the original Wildwood in Southlake years ago. It was a memorable chocolate chip cookie s’more, theatrically brought out on a rustic cutting board with a glass of milk. That specific treat was so remarkable that I even attempted to recreate it at home years later – I got close, but not quite close enough to capture its magic. To my slight disappointment, it appears that beloved s’more is no longer featured on their current dessert menu. Perhaps a classic that will make a comeback one day!
Despite Wildwood’s compelling tagline – “smoke, craft, whiskey” – it’s important to clarify that it is not a distillery itself. However, its bar truly specializes in an impressive selection of bourbons and ryes, specifically sourcing from American small-batch distilleries. This focus on artisanal spirits from dedicated producers is perfectly aligned with the “craft” aspect of their brand, promising an elevated drinking experience. This exquisite specialization sounds like the absolute perfect excuse to plan a return visit, especially during the warmer months, when Wildwood’s bar ingeniously transforms into an indoor/outdoor space, offering a refreshing ambiance to enjoy their premium libations. I fully intend to explore some of their specialty cocktails on my next trip, and without a shadow of a doubt, I’ll be ordering that exquisite hanger steak again – perhaps even with the red wine reduction this time! Wildwood Garland truly offers a dynamic and delicious dining experience, cementing its place as a standout restaurant in the North Texas culinary landscape.
